TRADITIONALLY THE THAIS would use a small fish they call pla tuu, a little mackerel that is their favourite fish. In all the markets throughout Thailand one can see small bamboo steamers filled with this fish. It is eaten with Nam Prik, in Miangs and in salads. It has a very oily and pronounced taste. Western mackerel, of course, can be substituted for pla tuu.
