THIS IS THE grilled chicken beloved by all travellers in Thailand. At every bus depot in every village, there is always a person selling it, and it always tastes so good. The trick is to grill the bird slowly and, if possible, over charcoal. The sweet chilli sauce is very easy to make, keeps for several weeks and has a multitude of uses. It goes well with grilled and deep-fried dishes.
