USE VERY LARGE, fresh prawns or perhaps even a large mud crab.
In a mortar and pestle (or a food processor), crush together the garlic, coriander root, peppercorns, salt and sugar. Marinate the prawns in this mixture for 1 hour. Grill or broil for about 2 minutes, or until cooked, and serve with the sauce.
