Khun Pen is a very well-known chef in Chiang Mai. When I first met her at her restaurant, Heun Pen, she was delightful, and her food even more so. Indeed, I have never, as yet, come across a restaurant in Thailand where there was so much care taken with the food. In a home, yes, but so far never in a restaurant. Here, then, is her recipe for a classic northern relish, which should be eaten with some Muu Grop (Crispy Fried Pork)
