SALTING EGGS WAS the method used by the Thais to preserve eggs before the advent of refrigeration. It radically changes the taste and texture of the egg: the raw yolks, for example, become almost as hard as if they had been cooked. They are certainly an acquired taste but, once acquired, addictive. The saltiness is used to enhance the creaminess and heat of curries.
