THIS ACCOMPANIMENT IS wonderful with a green or sour orange curry. It is also very good when, after preparing it according to this recipe, it is simmered in coconut milk until tender and then served sprinkled with sliced red shallots, finely sliced lemongrass and chillies. When Thais go on long journeys they often carry some of this dried beef, tossed in sugar and spices, to snack on.
