PICKLED GARLIC IS wonderful when eaten with a jungle curry or stir-fried with eggs and pork. It provides a good balance for any dish that is very hot, sour or salty.
Peel the garlic, soak in salted water overnight, then rinse. In a medium pan, combine the sugar, vinegar, salt and water. Bring to the boil, stirring, and when the sugar has dissolved, remove from the heat and cool. Place the garlic into a resealable bottle and cover with the liquid. Store in an airtight container in the refrigerator for 1 month before using.
