ANY FIRM TROPICAL fruit or even sliced pumpkin (squash) may be used in this recipe. The Thais enjoy a salty bite in some of their desserts. However, this can be alarming to Westerners, so omit the salt, if desired.
In a small enamel or glass (stainless steel may discolour the milk) pan, bring the coconut milk to the boil. Add the bananas and simmer for about 5 minutes, or until cooked. Add the sugar and salt and stir to dissolve. Stir in the coconut cream and serve.
