Fruit compotes can be found all over the world—they are an almost obligatory conclusion to Jewish holiday meals. “You can use almost any fruit, as long as you cook it within an inch of its life,” says my friend Jonathan.

With its concentrated fruit and wine flavors, this is delicious with Ricotta Bavarian, or with a plain cake or cookie.
