This is Australia’s contribution to the dessert world: a crunchy meringue shell filled with whipped cream and a rainbow of cut-up fresh fruits that soften the meringue slightly. In England, Pavlova is served everywhere, frequently at dinner parties. The name honors the Russian ballerina Anna Pavlova, legendary for her role in Swan Lake.
