A fruit snow is a smooth blend of pureed fruit (usually applesauce), folded together with beaten egg whites and served chilled. Apple snow recipes appear in most 19th-century American cookbooks. The origins of this dessert are probably English.
More elaborate is “Apple Floating Island,” in which a pool of custard is topped with apple snow. A German version is called Apfelschnee, a direct translation of “apple snow.”
