This is a Bavarian cream—a custard that’s gently set with gelatin and lightened and enriched with whipped cream. Bavarians are “presentation desserts,” served unmolded, and can be flavored with all sorts of fruits, liqueurs and nuts. This one is kept simple to bring out the sweet, milky flavor of the ricotta cheese. Although freshly made ricotta, found in Italian markets and in cheese shops, is especially delicious, supermarket ricotta will work fine.
