This is a straightforward chocolate-hazelnut pudding topped with whipped cream. Based on the Viennese Mohr in hemd (“Moor in a shirt,” a racist reference to the black-and-white scheme), it has a deep chocolate flavor and a molten dark center.

The pudding can be made in a ring mold or in individual molds, custard cups or ramekins. The timing will vary based on the depth of the mold; don’t overbake, as the warm, fluid center is what makes this.
