Wild Rice Pudding with Honey and Dried Cherries or Cranberries

Wild rice adds its distinctive flavor to this honey-sweetened pudding, and the dried fruit contributes additional sweetness. Cooking the rice in a lot of water, as you would pasta, results in clearly separate grains that are not mushy.

Ingredients

  • ½ cup dried cherries, dried cranberries or raisins
  • ½ cup hot tap water

Method

  1. Bring a large pot of water to a boil. Plump the dried cherries, cranberries or raisins in the hot tap water; set aside. Add the salt to the boiling water; stir in the wild rice. Cover and boil gently until quite tender, usually 45 to 50 minutes (the timing can vary). Drain in a colander, rinse with cold water and drain again.
