This Hungarian pudding, which is actually from Stiria, an area now in Austria, is made by baking tender homemade noodles made with cottage cheese in a souffléed batter, flavored with vanilla and lemon zest.


Cheese-Noodle Dough

  • 1 pound dry-curd cottage cheese, pressed through a sieve (discard any liquid)
  • 3 large eggs, lightly beaten


  1. CHEESE-NOODLE DOUGH: Combine the cottage cheese, eggs and salt in a bowl. Stir in the flour just until blended. Cover the bowl and chill well, at least 1 hour.
  2. Bring a large pot of water to a boil. On a well-floured surface or between 2 sheets of wax paper, roll out the dough to an even ¼-inch-thick rectang
