These rich confections are just ground nuts held together with butter and sugar, formed into balls and baked only until set, then rolled in confectioners’ sugar. Similar nut cookies go by several aliases—Mexican wedding cakes, Russian tea cakes and others.
This cookie can be made with any of several nuts. The high fat content of pecans (over 70 percent) makes them especially melting and flavorful.
