This is a wonderful Middle Eastern cake—simple to make, very different in composition from Western butter cakes, and low in fat. It’s made with semolina and yogurt and infused with fragrant orange flower syrup after it’s baked. Surprisingly, it isn’t cloyingly sweet, perfect with tea for a midafternoon snack.

Method

  1. SEMOLINA CAKE: Preheat the oven to 325 degrees F. Lightly butter an 8-inch square baking pan; set aside.
  2. In a large bowl, combine the sugar and yogurt;
