This is a simple and wonderfully light example of the spice cake genre. Fragrant with cardamom, it’s based on a Finnish recipe passed down to playwright Karolyn Nelke by her great-aunt.

Ingredients

  • Fine, dry bread crumbs, for coating the pan (optional)
  • 2 cups sifted all-purpose flour
  • 2 teaspoons ground cinnam

Method

  1. Preheat the oven to 350 degrees F. Butter an 8-inch square cake pan and coat with the bread crumbs or flour, tapping out the excess; set aside.
  2. Sift together the flour, cinnamon, cardamom, baking powder, baking soda and salt onto a sheet of wax paper;
