Ingredients: ¾ cup packed light brown sugar, or more to taste; ¾ teaspoon salt; 2 teaspoons finely chopped crystallized ginger; Basic Pie Dough for a 2-crust pie or Cream; 2 tablespoons cider vinegar or white-wine vinegar; 1 cup boiling water; ¾ cup raisins; 1¼ pounds sweet apples, such as Golden Delicious; 1 tablespoon milk, for glaze; Kosher or table salt; 1 tablespoon sugar, for glaze; Vanilla ice cream, for serving (optional); 1 pound (about 3 medium) green tomatoes cored, halved, seeded and coarsely chopped (about 3 cups); 1 small orange; Cheese Dough; ¼ teaspoon fresh-grated nutmeg; ⅛ teaspoon ground ginger; ¼ teaspoon ground cloves; ½ teaspoon ground cinnamon
