Crisp Apple Kolachy

Kolachy (also called kolacy or kolácky), fruit-filled buns or pastries with many variations, are a Czech specialty. The dough can be leavened with yeast or baking powder, or it can be rolled and folded to make a pastry.

This kolachy is made with a flaky cottage-cheese dough filled with apples. The recipe is from cookbook author Beatrice Ojakangas, who lives in Duluth, Minnesota, where German, Scandinavian and Czech baking traditions still thrive. Beatrice is a first-ra
