Semifreddo—literally “half-cold”—is a type of Italian gelato with a texture somewhere between ice cream and mousse. It’s frozen enough to refresh but yields readily to the touch of the tongue—suave, sublime sensuality.

Semifreddi can be flavored with fruits, nuts, caramel and characteristic creamy flavors, such as eggs and Marsala, crushed amaretti (almond macaroons), or chocolate and hazelnuts.

For this nut-flavored semifreddo, milk is infused with roasted hazelnuts until t
