Rocket, unlike that other recent hero the sun-dried tomato, has survived its period on the pedestal of fashion and settled down to become a normal and important member of the family of salad leaves. You can use a lot of it in this dish, as like spinach it rapidly loses bulk when heated. Its mildly nutty flavour chimes well with the hazelnuts.
