This is a very savoury and economical dish that enjoys what M&S food selectors call ‘good plate occupancy’. I’m sure there are plenty of dishes similar to this in Italian cooking – the saltimboccas, for example – but this is mine. This can also be made with veal from the loin or topside, but will of course be more expensive. You’ll need a large frying pan for this.
