Melt together the sugar and cold water, swirling the pan, and cook over moderate heat until the syrup turns a darkish brown. As soon as you see the liquid starting to smoke, pour in the warm water. Do this at arm’s length, with your hand covered by a cloth, because the liquid will splutter and spit for a moment or two. Remove from the heat and let cool.
