Not an ultra-sophisticated pud but extremely good. Sprinkle with more crumbled amaretti or toasted flaked almonds. Nectarines are just as good, but not so large.


  • 6 large ripe peaches
  • 1 egg yolk
  • 50 g caster sugar


Preheat the oven to 325°F/160°C/Gas3; butter a gratin dish.

Place the peaches in a bowl and cover with boiling water. Leave for 15 seconds then refresh in a bowl of cold water and take off the skins. Halve them and remove the stones.
