Ma‘moul accompanies the date cakes, ka‘k b’ajweh, as an Easter sweet. They symbolise the sponge that was used to wipe the face of Jesus as he suffered on the cross. As is the case with the date cakes, ‘pinching’ the finished cakes with special tweezers is an exercise in patience and creativity that not many enjoy.
