As all fish and shellfish are forbidden in the Buddhist vegetarian diet, real shark’s fin is, of course, out of the question for anyone adhering to it. But cellophane or glass noodles are allowed, and when cut into shorter lengths, they can, especially at a quick glance, give the impression of being shark’s fin needles.

Method

  1. Using a pair of scissors, cut the glass noodles into 5 cm (2 in) lengths and put into a large bowl. Pour over them plenty of very hot water and leave to soak for about 20 minutes or
