The first time I tried chicken cordon bleu, I was very young and remember thinking, “Well, that could’ve been better” (no disrespect to the French). You see, growing up Mexican means you favor vibrant and spicy flavors. And, sadly, a traditional cordon bleu just didn’t pack that kind of punch. My Mexican version replaces Swiss cheese with Oaxaca cheese and ham with chorizo.
