The first time I tried chicken cordon bleu, I was very young and remember thinking, “Well, that could’ve been better” (no disrespect to the French). You see, growing up Mexican means you favor vibrant and spicy flavors. And, sadly, a traditional cordon bleu just didn’t pack that kind of punch. My Mexican version replaces Swiss cheese with Oaxaca cheese and ham with chorizo.
The consistency of Mexican chorizo varies depending on whether it’s prepackaged or ground up at the butcher. U
