Sincronizadas, or “synchronized quesadillas,” are pretty much just quesadillas made with two whole flour tortillas, with cheese (and usually ham) sandwiched between them. This no-folding quesadilla is easy to make and easy to assemble; it’s perfect for a midafternoon or late evening snack. My fondest memories of these treats are when my brother, Josue, and I were allowed to stay up well past ten when the heat of the San Diego summer was in full swing.
