Three of my favorite C-lettered ingredients are utilized in one dish. Fresh chorizo sausage is used as the base of a sauce to steam mussels. Fresh (or Mexican) chorizo is more like your typical Italian sausage, except it’s flavored with dried chile peppers, such as guajillo and ancho, and it too needs to be cooked before eating. The Spanish variety is cured, making it good to slice and snack on. I chose the former because I like the way the crisped brown bits of pork get caught in the musse
