This rustic dish is sold on most street corners in Mexican towns. It’s particularly popular during celebrations, such as weddings and baptisms, when you need to feed a gathering of hungry people. Guadalajara, the capital of the Jalisco state of Mexico, is not only the birthplace of mariachi but also of birria. I like using beef ribs because the bones add deep flavor and give an unctuous feel to the broth. The special smell and taste of birria can make any mouth water.
