Fricassée is a classic French cooking method, and if is also a Cuban and Puerto Rican favorite. This homey stew is basically chicken in a pot, and it is found on many Cuban menus as a weekly special.
Rinse the chicken pieces and pat them dry; season with the salt and pepper. Coat a large Dutch oven or other ovenproof pot with the oil and place over medium-high heat. When the oil just begins to smoke, add the chicken pieces, skin-side down; you may have to work in batches. Brown the chicken for 6 minutes on each side, then remove to a platter.
