There are as many variations of moles as there are curries in India, each with it’s own distinctive color, flavor, and aroma. Mole verde is most commonly prepared in the states of Puebla, Tlaxcala, and Oaxaca, where it is one of los siete moles–the seven famous moles. The thick green sauce is made from pumpkin seeds, poblanos, tomatillos, fresh herbs, and sometimes even lettuce leaves for an added vibrant green color.
