It is nearly impossible to walk more than a block in any Mexican neighborhood in the United States without encountering a food vendor or two with a stand on the street. Even in Spanish Harlem in Manhattan, there is a community of women who sell freshly fried gorditas (“little fatties”) from little carts on 116th Street. Gorditas are standard snack fare; the best way to make them is with your hands.
