I grew up eating gorditas stuffed with chicken. This filling is very versatile: for a torta sandwich; folded into scrambled eggs; or just put 2 tablespoons in a corn tortilla, roll it up like a cigar, secure with toothpicks, and deep-fry to make flautas.

Ingredients

  • 3 tablespoons canola oil
  • 1 garlic clove, minced
  • ½ cup canned chopped

Method

In a large skillet, heat the oil over a medium flame until smoking. Add the garlic and cook until it just starts to turn golden, about 1 minute. Add the tomatoes, scallions, and jalapeño, and cook stirring, for 5 minutes. Add the shredded chicken, season with salt and pepper to taste, and cook for 5 minutes to combine the flavors.
