Pupusas–El Salvador’s national treasure–are corn tortillas stuffed with a variety of fillings, with cheese always included; my favorite is the simple duo of bean and cheese. Pupusas are stuffed before the dough is cooked, while flautas and burritos are stuffed after the dough is cooked–in Italian terms, pupusas are more like calzones than sandwiches. Pupusas are the main feature of Salvadoran restaurants, served alongside rice and beans to create a complete meal.
