These sandwiches are one of the favorites of my dear friend and fellow chef Alex García, a Cuban who could have them at any time of day. The recipe again utilizes leftover meal from when Cuban families make pernil or lechón asado. Pickled red onions are a familiar condiment in Cuban eateries. Electric sandwich presses are used to compress and heat–the sandwich, much like panini; at home, a waffle iron or a hot griddle, coupled with a weighty object will also provide suc
