Cuban Sandwich

This delicious sandwich is a classic Cuban lunch. The same filling ingredients are also used on a smaller, sweeter variety of bread and called a medianoche, or “midnight” sandwich, served cold and as a midnight snack after a movie or dancing. Thinly sliced roasted pork bin is commonly used in place of the pernil or lechón. I find that loin is too lean and does not provide enough juices to moisten and flavor the sandwich.
