This Cuban-style pounded steak is simply incredible; I had this on the menu when I was executive chef at L-Ray in Greenwich Village. The combination of pounding the meat and marinating it in acidic lime juice results in tender, juicy steak that you can cut with a fork; the marinade is great with any of your favorite steaks. Serve with Papas Chorreadas.
