Variations of this refreshing summer salad are sold from street carts in plastic bags. On Twenty-fourth and Valencia in San Francisco’s Mission District, a lady sits on the corner and sells this for just a dollar. The mango and jicama are put into a plastic bag; lime, salt, and pepper are added; and the vendor shakes the bag to mix. The salad is eaten with toothpicks as you walk.
