Mojo de ajo is a traditional Spanish pan sauce brought to the New World by the settlers in Mexico. Made with garlic, citrus, and herbs, it’s light and great for most seafood–and one of the few ways you can order fish in Latin places. Langostinos and shrimp are great with this also. Serve with white or yellow rice.
