Escabeche dishes, which use a Spanish technique to preserve cooked fish and poultry, can be widely found throughout Latin America, especially in coastal areas in Mexico, such as Veracruz and Tabasco, where seafood is abundant. Even though escabeche is a time-honored preparation, it’s a light dish that fits into today’s healthy lifestyle. The variations are endless, with different herbs and vegetables. I include jicama, pineapple, capers, and olives to add complexity.
