Peruvians first cultivated potatoes, and they’re still widely used in South American cooking. These Colombian-style creamed potatoes are commonly served with grilled butterflied steak as part of a mixed grill or with Sancocho. The roasted poblano is my own addition–it reminds me of the peppers in Tamales de Rajas.
