Calabacitas are Mexican zucchini that are light in color and egg shaped; if you can get your hands on them, use them. If not, Italian zucchini or yellow squash works also. This recipe stems from a traditional Mexican dish called calabacitas, which is a combination of zucchini, onion, tomato, and cheese. I simplify if here by cooking the zucchini with the vegetable salsa pico de gallo, which is normally served raw.
