This is my version of the popular street food esquites, roasted corn that’s sold from bicycle carts and eaten as a snack during an evening stroll through town. It’s also a welcome addition to any barbecue.

Ingredients

  • 4 ears fresh corn, unhusked
  • ½ cup (1 stick) unsalted butter, at room temper

Method

Preheat the oven to 350°F.

Place the corn, in it’s husks, directly on the center rack of the oven (you can also roast the corn on an outdoor grill). Roast for 20 minut
