Specifically, quelites is the Mexican green lamb’s quarters, a dark jagged-leafed green that’s the cousin of the herb epazote. In the common vernacular, though, quelites can mean a variety of greens, including spinach; I favor the pungent peppery bite of mustard greens, but any dark leafy green will work. The nutritious grassy broth is almost medicinal. Serve with Pollo Borracho.
