Piloncillo syrup is a must for the Latin sweet tooth. The sugar is melted down and spiced up, resulting in a delicious mahogany glaze. It is used in Capirotada and often poured over Rice Pudding and Buñuelos, and even on French toast and pancakes. The spicy sugar syrup is also used in many drinks: stirred into iced tea; shaken with rum, lime, and plenty of ice; and mixed into coffee drinks such as
