These light-as-a-cloud cookies could be named after the well-known dance of the same name because of the “shimmy” movement made when whisking the egg whites. Merengues are eaten all over Cuba and the Caribbean. As a tip, room-temperature whites whip better, so take them out of the fridge 20 minutes before making. Do not refrigerate or freeze these airy cookies because they soften.
