Polvorones–from the Spanish word polvo, meaning “dust”–are so named because these melt-in-your-mouth cookies crumble easily, which is why they’re often sold individually wrapped in tissue paper. When the cookies are made at home, the paper is festively colored and the package is given at weddings and other celebrations. Traditionally, polvorones are made with lard, but a mixture of butter and shortening also produces a wonderful cookie.
