This classic condiment is what I like to call a multitasker–it has 101 uses and is round on every table at Cuban restaurants. The tart and garlicky sauce is often served with mild vegetables, such as yuca, and it can be poured over potatoes just as easily. It’s also great with grilled meats and fish or used as a marinade, a salad dressing, or just for dipping. A range of acidic juices can be used, such as sour orange, grapefruit, or lemon–this recipe uses lime. Feel free to play around with
